GINGER : GENERAL INFO

HISTORY
Only kilometers from our farming project, an Elephant Park has been established in the village of Taro, a forested area in the center of Bali. This refuge was established to protect the smallest and perhaps the oldest of the Asian elephant species unique to the island of Sumatra. Ginger comes from the family being rhizomes that have fibrous roots, which grow and multiply underground. Ginger is a stunning plant that produces a striking flower. Its hot, sweet and culinary flavor is familiar to many people from the "gingerbread man" biscuits that were said to have been made popular by the 1st Queen Elizabeth.
ORIGIN
The origins of ginger are not known for certain, not is it known to occur in a genuine wild state anywhere, although it is grown in many tropical climates. There are nonetheless references to its cultivation by both the ancient Chinese and Hindus, since antiquity, suggesting it may have originated somewhere between northern India and East Asia. Ginger is one of the oldest Oriental spices to have reached South-Eastern Europe.Following are countries that produce ginger:

STORAGE
Ginger root should be kept in a cool, dry place, usually at 40 to 45 degrees Fahrenheit. Dried ginger should be kept in a cool, dark space in an airtight container. Pickled and preserved ginger should be kept in their original containers in the refrigerator. Store crystallized ginger in an airtight container in a cool, dark place for up to three months.

1. Cooking and Beverage

- Ginger may be classed as one of the more versatile spices, its tangy freshness, slight, warmth and sweetness complementing a whole range of dishes from sweet to savory. Fresh, preserved or powdered ginger is often added to cakes, pastries and biscuits.
- Indonesia
has a famous beverage that called Wedang Jahe, which is made from ginger and palm sugar; Indonesians also use ground ginger root, called jahe or djahe, as a frequent ingredient in local recipes.

2. Medicinal
Ginger is now recognized for helping to treat stomach upset and prevent symptoms of motion sickness. It has been studied for its antibacterial, antifungal, pain relieving, anti-ulcer, antitumor, and other properties. Six clinical studies have looked at ginger's potential to reduce motion sickness.
